Ondarre cheese's heritage
The Goiburu family, is a family that for more than 6 generations have Latxa sheeps and that they have been making Idiazabal cheese for more than 200 years. In an traditional way.
Our little cheese factory is located in Segura, in the centre of Goierri, in a beautiful farmhouse called Ondarre and that it has more than 500 years (XVI century). Near the farmhouse, there is the farm with sheeps, the grass, the cheese factory, the ripening chamber, the smokehouse and in the ground floor there is a small museum with ancients tools of our grandmothers and grandfathers.
Also, our cheese is one of the most honored Idiazabal cheese, since 1920 we have won continuosly national and international prizes. Our cheese has won the most important prize of the Idiazabal cheeses 3 times, and in the last one, our cheese was sold for 13.050€, becomeing one of the most expensive in the world.
All the visits are made by us, the people who take care of the sheeps, make the cheese and know everything about it.
About the experiences:
1- Idiazabal territory: Half cheese for 13.050€? + Secrets and tasting (Duration of 90 min approx.).
You will see:
-The farm: There we will see the Latxa sheeps and how we take care of them, feed them, the shearing… . All this is made in a traditional way.
-The Grass: We will see our green grass with the Aizkorri landscape and we will tell you about the use of the grass,…
-Visit to the museum: In the ground floor of the farmhouse, we will see the ancients tools, photos, prizes and a video of the elaboration process of the cheese.
-Cheese factory: We will visit the instalations of our cheese factory and we will see in the place how it is done.
-The ripening chamber: We will show our cheeses and how we take care of them and how we prepare them to sell.
-The smokehouse: We continue smoking our cheeses in the same way that our grandparents did.
-Finally: We wiil do a tasting of 2-3 cheeses or cheese cream. This accompanied by apple sweet, water, cider and bread.
2- Idiazabal territory: Do you want to make it? + Tasting (Duration 120-135 min).
During this experience that you can do in Ondarre, you will see the same of the other experience and also, we will elaborate our cheese with the clients, in a traditional way.
To finish the experience you will taste the cheese that you have made and others of the cheese factory, this all accompanied by apple sweet, water, cider and bread.
